为更好地迎接奥运会,北京市外办组织专家对中国菜单译文进行了审核。2007年1月底,北京市餐饮饭店中的数千种菜品、酒水将拥有统一规范的“英文名”。

“Scrambled Egg with Tomato”(西红柿炒鸡蛋)、“Egg plants with Garlic Sauce”(鱼香茄子),明年1月底,北京市餐饮饭店中的数千种菜品、酒水将拥有统一规范的“英文名”。据了解,北京市首次针对餐饮菜单规范英文译法的工作目前已基本完成,数千种菜品、酒水的英文翻译将从12月20日开始对外公布,邀请市民参与补充建议。

等待市民评判补充的北京市餐饮英文菜单涉及冷菜、热菜、羹汤、主食、小吃、西餐、甜品、中国酒、洋酒、饮料等多个品类,数千种菜品酒水,仅饮料目前已搜集到的就有两百多种。北京市餐饮菜单的英文译法计划在明年1月底推出,届时不仅北京市旅游局计划向全市星级酒店餐厅推广,而且还将为计划推出双语菜单的餐饮企业提供参考。

二、辣子炒素鲍鱼的做

1.最简单的:鲍鱼用鸡汤小火煮十分钟就可以吃了。

2.浓汁鲍鱼:鲍鱼洗干净,加高汤在锅里煮熟。另起锅放油,葱姜蒜沫爆香,放入带高汤的鲍鱼,加点火腿丁香菇和西兰花,为了好看可以放少许酱油或味极鲜,然后加水淀粉勾芡出锅即可!

也可以改良如下:鲍鱼切小丁,放高汤锅里煮熟。另起锅爆香,放入鲍鱼丁、香菇、西兰花、泡好的百合,点一点味极鲜,加点水淀粉勾芡点香油,加点香菜沫出锅。

3.炒鲍片

原料:鲍鱼

葱,姜,干辣椒(我比较喜欢辣,不喜欢的朋友可以不加)

佐料:糖+生抽拌好,口味自己可以调

做法:鲍鱼切片(横切竖切都可以,看你喜欢。。。)。切片后洗净,用开水过一下,这样的做法是为了炒的时候不会出水。

起油锅,姜葱辣椒,然后放鲍鱼炒,放佐料

注意时间,鲍鱼容易老,一收汁就可以起锅了。

熬鲍鱼用高级蚝油(李锦记金标蚝油)加上母鸡、猪骨头和火腿熬制的汤汁就最好了,无论干鲍鲜鲍或冰冻鲍都可以用这个汁来炮制,前提是鲍鱼要够大,火要非常弱,并且应该用沙锅熬制而不能用不锈钢锅或铁锅。

鲍鱼本身是无味的,鲍鱼的味道好不好一是火候二是鲍汁;

鲍汁很多人认为一定非要鲍鱼才可以,其实不然,鲍汁的主要成份是:鸡肉、火腿、猪皮(也可以用猪脚)等,至于鲍鱼其实放不放都无所谓。

私下认为,半生不熟的爽脆鲍鱼,是最好的吃法
