一、鲍鱼边怎么做菜或者煲汤
材料:小鸡一只斩块,鲜鲍鱼4-5只,香菇数朵泡软,红枣4-5粒,蒜8-10粒,姜三片。
调味料:泡香菇水小半杯,老抽,生抽各一大匙,糖半大匙,香醋数滴,米酒一大匙。
做法:锅里两大匙油烧热,放入姜片,蒜粒爆香。加入鸡块,香菇,鲍鱼翻炒数下后放糖,酱油,水,上盖焖煮五分钟。开盖转大火烧至汤汁将近收干(不停翻炒),滴香醋,拌均熄火。将所有材料转入砂锅,上盖置小火上烧至热锅,将米酒从盖上淋下至香气溢出即可。
这是一道很香,很有镬气的佳肴!
2.鲍鱼鸡汤
材料:
土鸡一只(约一斤重)、鲍鱼干(或罐头一只)、冬虫夏草二十克、枸杞三十克、清水五碗。
●做法:
土鸡切成对半,沸水烫去血水后沥干备用。
鲍鱼切薄片;冬虫夏草、枸杞洗净备用。
清水入锅后放入所有材料,以小火慢炖即可。
●功效:
预防用眼过度的暂时性视力减退、减缓视力不良之现象。
3.王浆鲍鱼干
【原料】
蜂王浆30毫升(或蜂蜜炼后30毫升亦可),鲍鱼肉60克,盐适量,菜油适量。
【做法】
将鲍鱼洗净切成条,码盐闷半小时,和少许豆粉,入油锅炸黄捞出;将蜂蜜与醋调成甜酸味,入锅内烧开,倒入鲍鱼条,翻动闷烧数分钟即成。不定时食之。功效:益气补血。适用于孕前产后血虚体弱。
4.菜名:鲍鱼煲萝卜汤(ID=493,汤,煲其他)
主料:白萝卜600克、干鲍鱼片80克、猪展460克、陈皮1/4个、姜二片。
配料:
做法:(一)干鲍鱼片用清水浸一小时,取起。(二)白萝卜去皮洗净,切厚块。(三)陈皮用清水浸软,刮去瓤洗净。(四)把适量之水放入镬中,加入姜一片烧滚,放卜鲍鱼干及猪展煮五分钟,取起洗净。(五)把水十一杯或适量放入煲内,陈皮及姜也放入煲内煲滚,加入于鲍鱼片及猪展、萝卜煲滚,慢火煲三小时半,下盐调味。
特点:鲍鱼有滋阴养颜明目的功用,对高血压肥胖症有食疗功效。萝卜有消积滞、化痰热、下气、宽中的功用。陈皮有理气去湿、导滞消痰的功用。
5.椰子淮杞煲鸡项
主料:鸡项肉一斤,鲍鱼干50克
配料:椰子一个,淮山50克,枸杞子25克,红枣随意
煲法:1,鸡项宰杀干净后取其肉,斩成大块,飞水;鲍鱼干浸透后每只切成两边,最好隔晚浸泡。
2,椰子剥净,取其椰子汁和椰子肉,椰子肉切成中块。
3,淮山,枸杞子,红枣分别淘洗干净,红枣去核。
4,将12碗清水倒进洗净的煲内,将煲置于炉上。
5,将煲内水烧滚后,把所有的汤料倒进煲内煲之。
6,煲内水再滚后,用小火煲3小时即可
7,煲好后,加入适量油,盐便可
功效:补气补血滋阴润脏
6.煲汤鲍鱼用卤水腌·即可成为下酒佳肴
鲍鱼的售价并不便宜,故应尽量利用,不可浪费。有鲍鱼煲汤后,可以用蚝油、酒、糖、生抽、老抽、麻油、胡椒粉、上汤或水、生粉煮成芡汁,把鲍鱼切片,放落芡汁中兜匀上碟,再加蔬菜伴边。或把鲍鱼放入卤水盆中,卤成卤水鲍鱼。甚至将鲍鱼切丝,加入笋丝、冬菇丝、肉丝、韭黄切短度,用盐、糖、胡椒粉调味,同烩成鲍鱼羹。
二、鲍鱼怎么煮好吃
蒜蓉粉丝蒸鲍鱼:做法既简单,又能保留食材的原汁原味~
原料:鲍鱼、粉丝、料酒、生抽、蚝油、姜、蒜。
做法步骤:
第1步、粉丝提前用温水泡软
第2步、用牙刷将鲍鱼两边的沉污刷洗干净
第3步、用小刀或勺子柄将鲍鱼肉挖出,去除内脏,冲洗干净,在鲍鱼肉上划一些花刀,鲍鱼壳也同样刷洗干净备用
第4步、将泡软的粉丝摆入盘中
第5步、将鲍鱼肉放入鲍鱼壳里,摆上摆入粉丝碗中
第6步、蒜蓉和姜蓉摆入碗中,倒入料酒、生抽、蚝油,调成酱汁
第7步、淋入鲍鱼粉丝碗中
第8步、摆入蒸锅中,大火蒸10分钟左右即可
